Pearse Lyons Distillery is Dublin’s only independent, family-owned whiskey distillery, located in the beautifully restored 18th-century St. James’ Church in the historic Liberties district. Distillation began in 2012, and the distillery opened to visitors in 2017, honoring its founder, Dr. Pearse Lyons, a master brewer and whiskey innovator.
